The shrimp take longer to cook than the instructions indicate, and in that time the asparagus gets soggy and falls apart. The rice stuck to the bottom of the pot, burnt, and had to be scraped off, and were still undercooked. The shrimp I got were not shelled. We threw out the entire thing after taking one bite.
This risotto was a two step process, you cooked the shrimp, set aside then cooked the rice. Although it was good it was a little bland for out taste.
The risotto really makes this meal! It's incredibly creamy and tasty. It pairs well with the shrimp. Serving sizes were good as well.
I was a bit dubious about preparing risotto in an Instant Pot, but this dish was delicious. I was very careful not to overcook the shrimp and veggies. The risotto cooked up up nicely in the pot. I added butter and more Parmesan (we like a little rice with our butter and cheese), warmed it trough and we had a quick and yummy meal.
Delicious but WAY TOO MUCH sodium.
